The rich symbolism of ARKANA is inspired by nature and its elements that we use in
its creation. These are the signs you will find on the face of ARKANA – the guide in our
process. Water as a symbol of life. The land that bears the priceless fruits. The fire that
applied in distillation processes. The air that brings the lightness of perfection.

The fifth symbol – the Philosopher’s stone – is the sign of knowledge, which we employ to combine all these elements in the final product, and which we consider an element no less important than the others.

TERROIR CHARACTERISTICS:

The vineyards are located on the low, hilly slopes of Sredna Gora, in the region of the village of Lesichovo, between 250-350 m above sea level, whose exposure determines the uniform sunlight. The Topolnitsa River crosses the village in its lower reaches and is a leading factor in the mild microclimate, contributing to the full and timely ripening of the grapes.

They are grown organically, without the use of pesticides and herbicides in between rows. Most of the 134 decares of vineyards are young – 3-4 years old, which are just beginning to bear fruit, but the company is also restoring old plantations with the Muscat Otonel variety (over 50 years old), and owns about 20 decares with good developed 10-11-year-old vines in active fruiting.
The location of 4 different locations around the village of Lesichovo allows for a clear manifestation of the different expression of terroir in them. This contributes to the successful selection of grapes in the field, in the fields – according to the degree of ripening and organoleptic qualities, which in turn contributes to the division of raw materials into qualitative and quantitative characteristics before the vinification process.

 TASTING NOTES:

The color is very light golden shades, the result of short aging of some of the distillate in oak barrels. The aroma is intense and distinctive for Muscat brandies.

There are typical notes of rose, but here in the spectrum of pleasant Turkish delights, which quickly turn into surprisingly smoky notes of sandalwood and sweet spices – cardamom, cloves and brown sugar.

The taste begins with a soft and gentle attack that brings a floral feel of white flowers, gul leaves, followed by soft hints of bergamot, dried apricots and bark. The aftertaste is long, multi-layered and leaves a reminder of a pleasant honey note on the palate.

 FOOD PAIRING:

Try Arkana rakia as a standalone aperitif or digestive. Move away from the cliche of the standard salad mix and experiment with cocktails (we highly recommend Rakia Sour, Rakia
Merry), as well as main dishes without strong spicy aromas.

VINIFICATION AND DISTILLATION

At the end of August and the beginning of September, all manual selective grape picking is carried out in boxes, which are transported to the distillery for additional selection before fermentation. Some of the grapes are pressed and fermented in the liquid phase. The rest of the grapes are crumbled and then fermented with the skins.

This contributes to the better extraction of aromatic substances during the process and their preservation in the wine material subjected to subsequent distillation. The alcoholic fermentation takes place within two weeks, after which the wine material passes to the distillation stage.

There are very slight golden hues in the color, as a result of the short aging of some of the distillate in oak barrels.
